The 1925 Brewing Co. (Joo Chiat)
In the restaurant at Joo Chiat - the modernisation of the Nanyang Teochew cuisine dominates the heart of the kitchen. Working with wood and charcoal ﬁred stoves and homemade vinegar and salted ﬁsh, dishing out a mix of both old and new recipes for omakase, or even the season a la carte menus; Ivan is slowly emerging as one of the few young chefs trying to keep the Teochew cuisine alive. The food concepts coupled with the brewery; he continues to pursue the embellishment of Asian styled beers to Asian styled foods for the Asian palate. Besides Joo Chiat, he also manages and personally cooks at private events and hosts omakase dinners, focused on serving Asian ﬂavours, in their pop-ups at the National Design Centre and the Simei outlet. He also frequents the Bangkok outlet for monthly four hands collaborations with notable Thai chefs, serving mostly Thai inﬂuenced Teochew cuisine.
