Sam Leong, Tung Lok Group of Restaurants (Singapore)
Singapore’s answer to a local celebrity chef, Chef Sam Leong’s claim to fame is his expertise in infusing traditional Chinese cuisine with a modern touch. His talents and contributions have been acknowledged with the World Gourmet Summit’s Awards of Excellence for the Chef of the Year in 2001, 2002, and 2004. His success progressed into the publishing world when he released A Wok Through Time, a collaboration of 60 of his best recipes. Some of Leong’s signature dishes include wok-fried crab claw in fresh green peppercorns accompanied with pan-seared radish cake and crispy shrimp dumpling coated with wasabi-gelo.
