The
scholar will have the opportunity to attend a patisserie
course at Cacao Barry Chocolate Academy. The course
will cover various aspects of pastry and dessert making.
Phase
1
All
applicants will be required to undertake a written assessment
on pastry subjects on 25 November 2006. Five candidates
with the highest scores will be selected to move on
to phases 2 and 3.
Phase
2
Candidates
are required to prepare two desserts (including a compulsory
chocolate-based dessert) in a simulated restaurant environment
to be held on 10 February 2007.
Phase
3
An
interview session will be conducted by industry experts
on 10 March 2007 to assess candidate’s suitability
in terms of personality and ambassadorship.
