knowledge of wines and is capable of delivering excellent
wine service and recommending appropriate wine pairings for
the various dishes on the menu. This individual must have
a flair for salesmanship.

Tan joined Les Amis as the chef sommelier in 1999 where he took
charge of guiding guests through the award winning 1,500-label
wine list. He has also taken related professional courses including
all levels of wine courses from SOPEXA, a certificate and higher
certificate in Wine & Spirits awarded by the UK Wines &
Spirits Board. This year, he was featured in Wine & Dine,
as "one of the Asian stars in the Singapore F&B scene".
Having been awarded the Screwpull Sommelier of the Year award
in the WGS Awards of Excellence in 2001, Tan has once again
been nominated for his relentless pursuit in excellence. |

Tan found his calling in his teens while he was working as a
commis sommelier at Les Amis. Subsequently, he was promoted
to chief sommelier before becoming a wine consultant for WineSense.
Two years ago, he assumed the position of cellar master of Raffles
Hotel where he coordinated the Raffles Hotel Wine & Food
Experience and vintner events such as Penfolds Bin 707, Château
Margaux and Claredon Hills vintner dinners. Tan was also a Screwpull
Sommelier of the Year finalist for the WGS Awards of Excellence
2001. |

| Before
joining 8 On The Bay as a wine sommelier, Chiong managed the
Michelangelo restaurant where she was responsible for a wine
list of 600 labels. Chiong's work experience is extensive, from
managing country clubs and bistros to working in a wine and
cigar room. Her achievements in this field are aplenty, including
various awards from wine associations and academies, such as
the Absolut Vodka Academy. In the year 2001, she emerged the
winner for the SAWEA (SHATEC-Australian Wine Education Awards).
Chiong is the first lady sommelier ever to be nominated in the
WGS Awards of Excellence. More remarkably, she is the youngest
in this field to have attained such a challenging and professional
title. |
