This award seeks to recognize a culinary institution that provides part/ full time courses for the enrichment of knowledge and experience within the various fields of culinary art. These courses must deliver high standards of learning, which are conducted in a formal learning environment.

Judging will be based on the following elements:
- Course curriculum - Teaching curriculum - credibility of school
- No. of courses - Level of courses - Facilities available
- Performance of students

This award encompasses nominations from Malaysia, Indonesia, Hong Kong and Thailand.

Singapore Hotel and Tourism Education Centre (SHATEC)

 
SHATEC has been supplying Singapore's hospitality needs since 1983. With an annual intake of 650, the institute offers certificates in various front line operations, including Food & Beverage, Front Office, and Food Preparation. Its courses also include Diploma programmes for Culinary, Pastry, Tourism and Hospitality as well as Higher Diploma in Hotel Management. SHATEC has extensive training facilities, from training restaurants, cooking kitchens, computer and front office labs to a demonstration bar, mock-up guest room, extensive library and fully equipped classrooms, all located in a hotel institution environment. It also operates an outside catering team that serves as a means to provide exposure and training for the students.

Taylor's College, School of Hotel Management (TCHM)
 

Taylor's College, School of Hotel Management (TCHM), Malaysia, has been a leader in supplying quality training in the field of hospitality management since its inception in 1987. It is the only hotel and tourism college outside France that conducts the internationally recognised French national Diploma and Higher Diploma programmes in English. One of the few schools that offer Higher Diploma Qualifications for Hotel and Tourism Management, its hospitality equipment is comparable to those in leading hotels. With such premises, it is not surprising that it has produced 1,700 promising graduates, with 550 apprentices trained for over 60 renowned hotels in Malaysia.

Since its opening in 1986, The Thai Cooking School at The Oriental has taught thousands of people the art of preparing fine Thai cuisine. Organised by some of the best chefs in the country, the programmes cover every facet of Thai cooking, culture and traditions. Classes are taught in a modern facility that allows each student to have a hands-on experience.

The Hospitality Industry Training and Development Centre, Hong Kong, believes in training the young people in Hong Kong to equip them for a rewarding career in the hospitality industry. Its wide spectrum of courses in vocational training include western food preparation, western bakery and pastry, food & beverage service, front office, housekeeping and tour guide & service culture.
It has developed an interactive CD-ROM training programme to enhance effectiveness and it also operates two western training restaurants under the English Speaking Dining Society (TDS), which has over 1,000 members that play a role in assisting in the training of the centre.
