birth of Saint Pierre under Emmanuel Stroobant's management
has revolutionised French cuisine. Formerly, Stroobant was the
executive chef and general manager of Fig Leaf Restaurant &
Café. Best known for overseeing the success of food establishments
and offering consultation in the United States, Australia, Malaysia
and Belgium, Stroobant has also previously won the Best Apprentice
Chef of Belgium in 1988 and the Best Expatriate Chef of Malaysia
in 1999. |

Yeo has been with Raffles The Plaza and Swissôtel The
Stamford since 1986. His culinary excellence stretches across
most of the hotel's food & beverage outlets, culminating
at the former Compass Rose restaurant. In 1996, he was declared
the winner when he represented Singapore in the prestigious
Bonlac "Great Chefs of Asia" event. Yeo has emerged
champion for events such as the Black Box Culinary Challenge
in 1999. This is Yeo's consecutive nomination in the same category
at the WGS Awards of Excellence. |

Quek bagged the Chef of the Year award at the World Gourmet
Summit (WGS) Awards of Excellence in 2001.
Having
embarked on his career as a chef at Mandarin Oriental in 1985,
he later ventured to Europe where he worked at some of the
finest establishments including Hotel de Crillon, Jean Bardet,
Roland Marzere's Hotel du Centenaire and L'Oasis in France,
and the Waterside Inn and Le Gavroche in England. Now, Quek
is one of the partners who hold the reins at the exquisite
Les Amis since 1993.
